 Bacon Meatloaf Recipe

This is an exceptionally tasty meatloaf which is easy to make and even easier to eat!

The ingredients below will make one 900 gram (2lb) meatloaf.

Sage and Onion Stuffing Mix 3 ounces 75 grams
Streaky Bacon 12 rashers 12 rashers
Minced Pork 9 ounces 250 grams
Minced Beef 9 ounces 250 grams
Horseradish Sauce 2 tablespoons 2 tablespoons
Cranberry Sauce 4 tablespoons 4 tablespoons

COOKING EQUIPMENT
900 gram (2lb) loaf tin.

Pre-heat the oven to gas mark 6, 400°F (200°C).

Method


Pour 250ml (8fl oz) boiling water over the stuffing mix and leave to cool slightly.

Lightly grease the loaf tin with with olive oil. 

 
Overlapping the bacon rashers, line the loaf tin with the rashers hanging over the sides.

 
Mix together in a bowl, the beef, pork, stuffing and horseradish sauce, making sure they are well blended.

 
Pack the mixture on top of the bacon rashers in the loaf tin.

 
Seal in the meat by overlapping the bacon rashers, see picture on right.


Cook in the oven for 40 - 45 minutes until the bacon is crispy and the meat cooked.

We turned our meatloaf over in the tin and put it back under the grill for a couple of minutes, just the crisp up the bacon on the bottom.

Dish up and enjoy with cranberry sauce and some delicious fresh vegetables.
