 Barbeque Pork Sausages

Very tasty pork sausage with thyme, homemade for your summer barbeque.

INGREDIENTS

The ingredients below will make at least 8 sausages depending on the size you wish to roll them.

Garlic clove finely chopped 1 1
Grated onion 1 1
Lean minced pork 1 lb 450 grams
Toasted ground almonds 1¾ oz 50 grams
Fresh white breadcrumbs 1¾ oz 50 grams
Finely chopped fresh or dried thyme 1 tbsp 1 tbsp
Flour for dusting    
Vegetable oil for brushing    
Salt and pepper    

To serve

Fresh hot dog rolls, slices of onions to taste, tomato ketchup or mustard.

Pre-heat the barbeque.

Method

 
Use a pestle and mortar to crush the almond if you have one, otherwise put the almonds in a plastic bag and roll them with a rolling pin to crush them.

 
I used the food processor to grate the onions finely.  If you don't have one you can use a cheese grater.

 
Put all the ingredients into a large bow, season with salt and pepper and mix well until combined.  I used my hand for this as it was easier to make sure it was well mixed.

 
Using your hands, form the mixture into sausage shapes, then roll each sausage in a little flour and transfer to a plate, cover with cling film and refrigerate for 45 minutes.




Brush some aluminium foil well with the oil then put the sausages on the foil and brush them well with a little more vegetable oil. Transfer all to the barbeque and cook.

Barbeque over hot coals, turning the sausages frequently for about 15 minutes or until cooked right through.  Serve in a hot dog roll with salad, sliced onions if preferred, ketchup and or mustard.  Delicious
