 Hawaiian Pork Casserole

Click picture to enlarge

This is a very fruity Pork Casserole. We served it with wild rice.  It would also be extremely tasty with new or mashed potatoes and lots of fresh vegetables.

Add the the peppers and mushrooms and cook for a further 1 - 2 minutes.

Add the pineapple to the pan and stir well.

Put in the stock, red wine and seasoning, mix well and bring to the boil.

Transfer to the cooking pot.

Cover with the lid and leave to cook for about
3 - 4 hours stirring occasionally.

Serve with rice or potatoes and fresh vegetables.

An absolutely delicious meal fit for a king.
