Coconut Topped Cupcake
Spectacular looking but so easy to make. Decorate the coconut with anything that takes your fancy. This is so easy that kids can make one of these cupcakes.

INGREDIENTS
When you have made the basic cup cake it needs to be topped with icing
of some type to give a surface for the coconut to stick to. Either make
butter icing or
cream
cheese icing. Click either of them to go to the page to make the icing.
For the coconut topping you will need one packet of desiccated coconut.
PREPARATION TIME: 15 minutesMake the cup cakes and ice them as described in the Ingredients section above.
STEP 2Use a knife dipped in warm water to spread a thick layer of icing over the top of the cupcake. It's not important to get the icing absolutely even.
Sprinkle the desiccated coconut over the top of the icing and gently firm it in with your hands. Decorate with sugar shapes, glace cherries, Smarties, M&Ms, or anything you can think of.
