A stylish tapas based on the original meatballs tapas recipe. Topping them off with a
slice of baked chorizo makes this an original and intriguing recipe that's quick to cook.

1lb minced beef
450g minced / ground beef
3oz finely sliced chorizo
85g finely sliced chorizo
½ medium onion
3 garlic cloves
2 tablespoons of grated Parmesan cheese
3 tablespoons of grated Parmesan cheese
1 teaspoon dried rosemary (2 teaspoons if chopped fresh)
3 ripe tomatoes
2 tablespoons white wine
3 tablespoons white wine
1 heaped tablespoon of concentrated tomato puree
2 tablespoons olive oil

Cook's Notes
The chorizo (ideally) should be very finely sliced. The best way to do this is to ask your
butcher to slice as finely as possible. Packet slices of chorizo can also be used.
Preparation
Finely chop the onions. It is important to finely chop them, a food processor does a good
job.
Finely chop the garlic.
Grate the Parmesan cheese.
Liquidise (or chop) the tomatoes.
Finely chop the herbs if using fresh.

Put the minced (ground) beef, onions, garlic, rosemary, Parmesan cheese and a good sprinkling
of salt and pepper in a bowl. Mix it all together with your hands for a few minutes.
Take about an eighth of the mixture and form it into a small ball, about the size of a golf
ball. Firm it together well. Do the same with the rest of the mix so that you have eight or
so meatballs.
Heat the olive oil in a largish frying pan to a medium heat, then add the meatballs.
Fry for five minutes, turning them frequently so that they are browned on all sides.
Add the wine, tomatoes, tomato concentrate, more salt and pepper and cook them on a
medium low heat for fifteen minutes. Turn the meatballs occasionally and spoon the sauce
over them to keep them moist.
While the meatballs are cooking heat the oven to 180°C / 350°F / Gas Mark 4. Lay
the slices of chorizo on a baking tray and place them in the oven for 5 minutes.
Check half way through to ensure they are not beginning to burn.
When the meatballs are cooked, serve them on a plate and top each one with a slice
of baked chorizo. With the exception of the chorizo, the meatballs can be prepared
earlier and heated in the microwave.
